Natural Way
Mills Whole Wheat Bread
Sweet and
hearty, this mild wheat bread tastes
of honey and molasses. Its soft crust
and crumb make delightful, easy-going
slices that your family will love!
4 1/2 c. warm water
1 tsp.
honey or molasses
3 T.
active dry yeast (Dissolve yeast in
water and sweetening)
Add:
4-5 c.
100% Whole Wheat Flour
2 T.
gluten flour (opt.)
Beat
with electric mixer until gluten is
well developed—about 3 min. Let rest
until light and foamy—about 5 min.
Add:
3 T.
honey or molasses
1 T.
(rounded) salt
1 T.
liquid lecithin
Stir
well, gradually adding balance of
flour (about 4-5 c.). Knead until
smooth and spongy (8-10 min.). Place
in lightly oiled bowl, cover and let
rise until well doubled in size.
Turn on to counter, divide into 5
equal parts and form into balls. Let
balls rest 10 min. Form into loaves,
and place in slightly oiled pans, let
rise until doubled.
Bake at 350 degrees 35-40 minutes.
Note: small loaf pans are
recommended to use with whole-grain
breads.
